From Birthday parties to family get togethers no festive celebration is complete without a bit of color, sprinkles, sweetness and vanilla cake. And that’s why Funfetti really does the trick. It’s all that baked into one tender spongy cake, topped with bright or pastel frosting and enjoyed by all. But sometimes you want a single-serving version or a little cake fast, so that’s where my 1 Minute Microwave Funfetti Mug Cake comes in.

Ingredients

  • 2 tablespoons (1oz/28g) butter
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons sugar
  • 6 tablespoons (50g/ 1¾ oz) self-rising flour ( to make SF flour add 2 tsp of baking powder to 150g/6oz/1 cup plain flour)
  • tiny pinch of salt
  • Best-Ever Buttercream Frosting recipe

Instructions

  • Place the butter in a large mug and microwave it for 20 to 30 seconds until melted.
  • Add the egg and whisk it in with a fork.
  • Stir in the milk, vanilla, and sugar.
  • Add the flour and salt. Mix the batter with a fork until smooth.
  • Divide the batter between two mugs. Microwave separately for 50 seconds each until risen. Take care not to overcook or the cake will dry out fast.
  • Once cooled pipe on a swirl of Buttercream Frosting and enjoy!

Why are the instructions to put this into 2 mugs at the bottom? I made 4 cups when I meant to make 2. Why does it say 2 teaspoons to a cup of flour?? I thought it meant 2 teaspoons to the 6 tablespoons of flour?? Why not just give us the measurement for the 6 tbls. smh

This turned out amazing!! Lots of mug cakes that I have tried are raw at the bottom and taste like eggs or are to sweet but this is by far the best one I have made! I love all your ideas. I am a 12 year old girl who LOVES to cook and bake and can’t wait to get your cookbook! I am hoping to get your cookbook for my birthday in October since I don’t currently have enough money. 🙂 Thanks so much!

I tried ur mug cake … I didn’t had confetti so I tried a without it but still it turned out soo good….can u tell a simple chocolate mug cake recipe too… I am 14 and I love to bake.. looking forward to more easy recipes of urs…well u should launch a baking line too….u should also collab with Rossana Pansino… ❤️🖤 ~Laiba

Easy to make however I think it should be eaten Once it cools down… I don’t think it can last any longer….
