I can’t even tell you how excited I am about my 3-course Mother’s Day Brunch! Mother’s Day is all about showing how much we appreciate all the mammies out there, and this brunch is sure to show how much you care! I started it off with a Blueberry Muffin Smoothie as the first course, and for my second course I’ve whipped up this beautiful and healthy Breakfast Parfait cantaloupe fruit bowl!

The base of this dish is a juicy and refreshing melon! As if cantaloupe and fruit salad weren’t great on their own, I decided to combine the two! All I did was scoop out the center of my cantaloupe and fill it with creamy Greek yogurt. From here, I topped it off with fresh berries and crunchy granola. This is the perfect combination of textures and flavors, as it’s both crunchy and creamy while being sweet and tangy! This goes so well with my last course, which is a Savory Bacon and Cheese Strata. I can’t wait for you all to give these a try, whether it’s for Mother’s Day or any other special occasion!

This recipe is versatile, so make it your own. You can use any melon you like like honeydew or even those mini watermelons. Any of them will make for a beautiful presentation for your fruit bowl!

Switch up the fruit on top and add whatever is in season. Peaches, banana and mangos would make a great addition to these breakfast bowls and would add even more flavors. Even go tropical by adding pineapple, limes, and even substituting out the yogurt for coconut yogurt. You will think you are on vacation after digging in to this fruit bowl!!

Make a healthy and delicious Breakfast Parfait for Mother's Day Brunch to show your mom how much you care this Mother's Day.

Ingredients

  • 1/2 cantaloupe , seeds removed
  • 1/2 cup (4oz/120g) vanilla greek yogurt
  • 1/4 cup (11/2oz/45g) granola
  • 1/2 cup (21/2 oz/75g) of your favorite mixed berries (I used strawberries and blueberries)

Instructions

  • Cut open the cantaloupe. Using a spoon scoop out the seeds from the center and discard.
  • Fill the hole with the yogurt.
  • Top generously with berries and granola arranging in groups.
  • Garnish with fresh mint and enjoy!

I love the idea but my mom does not like cantaloupe. Do oyu have any suggestions of other cool and different things or foods I could serve this in? Thanks so much,

Ok, this might be a silly question, but my mom doesn’t usually like yogurt in her breakfasts. Could I switch it up for something like chia seed pudding instead?
Sorry if I sound stupid!!
