You read it right, this is my recipe for homemade Funfetti Rice Krispies Treats! If you love that sweet funfetti cake flavor and enjoy classic Rice Krispies Treats you will go nuts for these! We all know and love the classic Rice Krispies Treat. They are perfect for back to school lunches, after school snacks, or to easily whip them up for a party or event.

When creating this recipe I knew I wanted to take the Rice Krispies Treats we know and love and make them even Bolder. As a big fan of Funfetti Cake, I was so excited to see what I could develop. By adding Fruity Pebbles cereal and plenty of melted white chocolate I created a new way to enjoy Rice Krispies Treats, and man are they yummy!

This recipe really could not be easier to whip up. All you do is combine all of your ingredients in a bowl, let them set up in a big tray and cut them into thick squares. They look every bit as as good as they taste, and these rainbow-speckled treats are perfect to make with your kids.

Gemma’s Pro Chef Tips for Funfetti Rice Krispies Treats

  • This recipe uses Fruity Pebbles cereal to make it colorful. If you can’t find this, use an equal amount of Rice Krispie cereal and mix ½ cup (3 ½ oz/100 g) of sprinkles.
  • You can use either full sized or mini marshmallows to make this recipe. Go by weight for the most accurate measurement. If you don’t have a kitchen scale, look on the bag the marshmallows came in. There is usually a weight printed on there.
  • Marshmallows and butter can be melted on the stove if you don’t have a microwave. Use a large, heavy bottomed pot over low heat, stirring constantly to prevent burning, until fully melted.
  • Use low heat or short microwave spurts when melting marshmallows and stop cooking as soon as the marshmallows are melted. Overheated marshmallows can caramelize the sugar and result in hard rice krispies.
  • When mixing the cereal with the melted marshmallows, be gentle to keep the Fruity Pebbles intact. This will keep your treats looking their best.
  • For an extra special handheld treat, fill Homemade Ice Cream Cones (or store bought) with the Rice Krispie Treat while it’s still warm and let set before serving. Kids absolutely love this.

Easily make my Funfetti Rice Krispies Treats recipe, a delicious back to school treat for lunches, after school snacks or for anytime!

Ingredients

  • 5 ½ cups (5 oz/142 g) Rice Krispies cereal
  • 2 ½ cups (2 ¼ oz/65 g) Fruity Pebbles cereal
  • 1 cup (6 oz/170 g) white chocolate chips, plus an extra handful for topping (optional)
  • ¼ cup (2oz/57 g) butter
  • 5 cups (10 oz/285 g) marshmallows

Instructions

  • Line a 9x13-inch (23x33 cm) pan with parchment paper and set aside.
  • In a large bowl, combine the Rice Krispies cereal, Fruity Pebbles cereal and 1 cup (6 oz/170 g) white chocolate chips. Set aside.
  • Add the butter and marshmallows into a large, microwave-safe bowl and cook on high for 30-seconds at a time, stirring in between, until the marshmallows are melted. This will take 2-3 minutes.
  • Carefully fold the cereal mixture into the melted marshmallows until fully coated, taking care not to crush the cereal.
  • Pour the mixture into the prepared pan and very gently spread and flatten into an even layer. If desired, sprinkle a few more white chocolate chips over the top, pressing down gently to help them adhere.
  • Let the Rice Krispie treat set for an hour before cutting into squares. Store at room temperature in an airtight container for up to 7 days.

This was so fun!! I’m moving soon and I needed to finish up a big box of Rice Krispies so this was perfect! It was a colored spring addition cereal so the colors were perfect!! 🌈

And Gemma can I use the glass jar method to whip up the marshmallows in the homemade marshmallows recipe as I do not have an electric hand or stand mixer (I mean the method that we used to whip up whipped cream). I only have a whisk so…

Hi Gemma, This is Spurthi and I am 12 years old. I actually want to make rice krispie treats but I am not able to find rice krispie cereal in India not even on Indian amazon….So is there a substitute for the cereal which has the same texture and taste or is there a way you can make it at home….I really love Rice krispie treats and always used to have them when I lived in USA long ago.

My 5 year old made it today and it was scrumptious! The only thing I had to help him with was stirring the whole thing together-the marshmallow stiffened up really quickly 😊 nothing like sticky, goey goodness on a spatula though!
