Hi Bold Bakers!

Some of my favorite dishes come from a twist on the norm, for example a Pizza in a Mug. So I thought why wouldn’t everyone love a Microwave Calzone in a Mug?! It has the same cheesy doughy goodness of the Mug Pizza, just more of it. Although not a traditional Calzone, if you are a fan of dough, pizza sauce and cheese then you won’t complain when you try this. Now that’s a recipe for a good time.

Bold Baking Tips for Mug Meals

The cook time is based on my microwave which is 1200 Watts so your cook time may vary depending on the wattage of your microwave. When in doubt check your mug meal after 45 seconds just to make sure it is cooking ok. You can always cook it for 30 second intervals if you wish. Also the mugs I use are small, roughly 6oz (¾ /1 cup) but feel free to use bigger.

Ingredients

  • 8 tablespoons all purpose flour
  • ¼ teaspoon baking powder
  • teaspoon baking soda
  • ¼ teaspoon salt
  • 6 tablespoons milk
  • 2 tablespoons olive oil
  • 3-4 tablespoons tomato sauce
  • 4-5 tablespoons finely grated mozzarella cheese
  • ¼ teaspoon dry Italian seasoning
  • Parsley for garnish (optional)
  • 2 min 30 second cook time

Instructions

  • In a microwave safe mug combine your flour, baking soda, baking powder, and salt.
  • Once dry ingredients are combined add in the milk and oil and mix thoroughly until you have a smooth batter (if there are a few lumps, not to worry).
  • In the center of the batter drop a spoonful of your tomato sauce, cheese, Italian seasonings and pepperoni. Pull the batter over the center to hide the calzone filling underneath the batter.
  • Microwave for 1 minute and 50 seconds to 2 minutes and 10 seconds or until the top of the calzone is risen and firm to the touch (timing is based on my 1200W microwave so your timing might vary) Garnish with parsley and tomato sauce if you’d like. Enjoy straight away!

Recipe Notes

Notes
Cooking time will vary greatly depending on your microwave and the width and depth of the mug. The mugs I use are small, roughly 6oz (¾ /1 cup)
Always keep a close eye on your mug while in the microwave so it doesn’t over flow or over cook.
⅛ teaspoon is simply a ½ of a ¼ teaspoon
1/16 teaspoon is simply a ¼ of a ¼ teaspoon

We did not have much energy but wanted a quick meal. I accidentally put too much sauce in the middle of the calzone so we turned it into a pizza and it tasted AMAZING! Thanks so much. I used to have an egg allergy (still have nut/fish allergy) and I was never allowed to eat breads/doughs/cakes. Thanks for being so considerate of people with allergies!

Can I use Bisquick baking mix I don’t have baking soda or baking powder for pizza & calzone recipes?

I’m Italian and this calzone doesn’t resemble any calzone I’ve ever made. I would change the name of this fake mug meal. Sorry but I wont make it and humiliate my Italian Heritage. One star for your effort

I read the comments and saw the pics, so I took just over half of the batter out of the mug, put the cheese and pepperoni in then put the dough back on top and covered it up and it worked a treat, soooo good!

Hi I haven’t tryed this recipe yet because we don’t have any motsarrella can I use cheddar instead?

Zoinks! I tried this recipe. twice to give it a chance. This is the first of Gemma’s recipes I’ve tried and I must say it was disappointing. The dough, “batter” in this case, was impossible to pull over the ingredients as instructed. I tried it again and left half the batter out, then put it on top after putting the final ingredients in. DO NOT “ENJOY THIS STRAIGHT AWAY”, as suggested. I tried and burned my mouth. So, I cleaned up everything and tried it again, still too hot. Hi Gemma, just found your page and i’m so excited to try all your recipes! Question, if i don’t have marinara sauce or pizza sauce – will pasta sauce work? Or are there any easy recipes for marinara? I have tomato paste lying around too! Can’t wait to try all of the mug meals. Such a good idea!

I tried it today for dinner and it taste so good. The thing is when I put it in the microwave which is 1200 wattage, the cheese is on the top.

Hi Gemma, When i did this recipe you said 2 tablespoons of olive oil right? Well mine just tastes like olive oil not a calzone.
