Hi Bold Bakers!

One of my favorite savory breakfasts is a Breakfast Burrito. They are filling and full of things I love like eggs and cheese, and wrapped up in a soft white tortilla. To be fair, if you wrapped an old boot in a tortilla I would put salsa on it, so to fill it with some of my breakfast favorites is just a no brainer.

Why Make A Mug Burrito?

My Microwave Breakfast Burrito recipe is equally as good as one from a taqueria, except it will be cheaper and you are in control of what ingredients go in. You know those times you have leftover cooked sausage, rice or potatoes from last night’s dinner? Add those to your breakfast burrito. No waste and no fuss.

Breakfast has got to be the one meal that you never really know what you want or have the time to make it. I’m really bad at deciding what I want for breakfast, but one thing is for sure: whatever it is, I want it fast, and that’s why Mug Breakfasts are so great.

A whole breakfast in a mug: a soft tortilla with eggs, cheese, and salsa, called a mugrito, or a burrito in a mug.

Ingredients

  • 1 large 9 inch tortilla (flour or whole wheat)
  • 2 eggs
  • 2 tablespoons beans (pinto/black beans)
  • 2 tablespoons cheddar cheese , grated
  • 2 tablespoons scallions , chopped
  • salt and pepper
  • Garnish
  • salsa
  • sour cream

Instructions

  • In a large microwavable mug press in a fresh tortilla. It will naturally fold into the shape of the mug and find its way.
  • Crack in your eggs and whisk up with a fork, taking care not to tear the tortilla.
  • Now add in your favorite burrito mixins like cheese, beans, and scallions. Season with salt and pepper and mix all together. Whatever ingredients you have to hand will work great.
  • Microwave for 1 minute 20 seconds. Check, and if the eggs are still liquid, cook for another 15 -20 seconds. Keep an eye during cooking so the eggs don’t overheat. You don’t want an egg-splosion in your microwave. The cook time is based on my 1200W microwave so yours might vary.
  • Once done, let it sit for 3 minutes to cool and serve with some sour cream and salsa on top. I like to eat a little out of the middles and then lift it out of the mug and roll it like a burrito.

Just found you 😁. Modified this used a wrap then popped 2 beaten eggs in and a good helping of grated cheese and shake of onion flakes. Ground some salt and pepper then cooked 1minute 20seconds.
Oh YUM.
Problem I want to try and donut but I’m full now

I really like the concept of this mug burrito, although I’d prefer some meat in mine! Guacamole would also be a great addition. Alas, I don’t have tortillas on hand, but I’m excited to give it a try soon.

Hi Gemma, I made some homemade chili the other day full of beans & veggies even fresh sweet corn. What if I used that instead of the eggs & topped with cheese & a small burrito wrap for the roof so to speak? My chili has some vegetarian refried beans to thicken it & tons of 3 kinds of peppers, onions, corn, celery, tiny chopped carrot pieces 3 kinds of beans & tomatoes pureed plus chili powder, cumin, paprika hot & smokey, oregano, basil, coriander s&p & chipotle chili powder as well-what about adding a spoonful to the Mug Ramen… Read more »

My eggs were runny after the recommended cook time. My son popped the mug back in the microwave and zapped them a little too long. If we had left them out and let the residual heat continue to cook the eggs this would have been more successful. Kitchen error on our end. 🙂

I notice when you say to microwave for 1 1/2 minutes, you don’ say at what setting on the microwave. Are all your recipes done on high setting?

I really love this your recipes Gemma, but I have a question about cooking the Mugreto. What would you do if the top of the egg was cooked, but then the bottom still had some liquid from the egg? I didn’t want to cook the egg any more because the top was getting really cooked. Hope you can help!
