If you’re a chocolate lover like me, you like it in things, on things, dressed up or just plain. This recipe for a Silky Smooth Chocolate Soup is a playful take on one of my all-time favorite flavors and textures. Somewhere between rich drinking chocolate and a warm chocolate pudding this is a really fun easy take on a chocolate dessert!

It’s no wonder it was quickly one of the recipes I decided to include in my Bigger Bolder Baking cookbook — and I even made it with my dear friend Kate Martindale, celebrity prop stylist, so be sure to watch the video!

What is Chocolate Soup?

Made of cream, milk, rich bittersweet chocolate and a bit of cornstarch, chocolate soup is almost literally what it sounds like — a melding and melting of the creamy dairy and the chopped chocolate. Topped with freshly whipped cream and some shaved chocolate, this dessert looks fancy and a bit retro but is really fun. It can be eaten with a spoon just like soup or sipped on in a handheld mug, either way, this is my idea of chocolate heaven!

Can I Add Anything Else to It?

This recipe is very simple and made of only 4 basic ingredients that just allow the chocolate to sing on its own. That said, chocolate pairs well with so many flavors. From mint to orange to cinnamon and beyond. If you’d like you can add in an extract or flavor in a small amount for your own variation on my recipe.

Is Chocolate Soup Served Hot or Cold?

This soup can be served warm which really highlights it’s rich flavor and texture. If you’d like you can also serve it cold, it such a versatile no-fuss chocolate dessert.

Can You Re-Heat It?

Yes! It’s actually really lovely re-heated the next day. All you have to do is gently bring it up to temperature in a saucepan (or warm through in the microwave) then serve up and enjoy!

How Do I Store Chocolate Soup?

Chocolate soup can be covered and stored in an airtight container in the fridge.

How Long Does It Last?

This dessert is a lovely make-ahead chocolate dessert as it can be kept for up to 3 days.

Ingredients

  • 3 cups (24floz/675ml) full-fat milk
  • 1 cup (8floz/225ml) heavy cream
  • 2 cups (12oz/340g) chopped bittersweet chocolate
  • 3 tablespoons cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • Whipped cream for serving
  • Grated chocolate for serving (optional)

Instructions

  • In a medium saucepan, combine the milk and cream and bring to a simmer over medium heat.
  • Reduce the heat to low, add the chocolate and whisk until the chocolate starts to melt.
  • Meanwhile, in a small bowl, mix the cornstarch and the water together to form a runny paste. This will be stiff at first, but keep mixing until combined and smooth.
  • When the chocolate mixture comes to a simmer, add the cornstarch paste and cook, whisking continuously, for 1 minute, until the soup is thick and smooth.
  • Reduce the heat to very low and simmer for 2-3 minutes to cook out the raw taste of the cornstarch.
  • Turn off the heat and whisk in the salt and vanilla. Pass the soup through a sieve for a smooth silky result.
  • Divide the soup among six serving bowls and garnish with some freshly whipped cream and grated chocolate if you'd like. Enjoy warm.
