Learn how to make Halloween Cupcakes using my Pumpkin Cupcake recipe and decorate them for Halloween including a Pumpkin, Ghost and brains!

Ingredients
  • 1 cup (240g/8oz) pumpkin puree
  • 2 eggs*
  • 1/2 cup (100g/3oz) vegetable oil
  • 1 teaspoon vanilla
  • 1 cup (240g/8oz) sugar
  • 1 cup (150g/5oz) all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • Buttercream Frosting
  • Rolled Fondant
Instructions
  1. Preheat oven to 375oF / 190oC
  2. Combine the pumpkin, eggs, oil, vanilla, and sugar.
  3. Stir together the remaining ingredients and add to the pumpkin mixture, mixing just until blended. Bake in a muffin tin for about 20 minutes or until a toothpick comes out clean.
  4. Leave to cool.
  5. To decorate: Watch the video for the step by step decorating tutorial. It is easy to follow and fun to recreate.
  6. Once decorated store in the fridge for up to 4 days.

Store the cupcakes in an airtight container for up to 4 days.
