Ingredients
  • ½ cup (4oz/115g) butter
  • 1 cup (5oz/142g) all-purpose flour
  • 1 cup (8oz/225g) sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup (8floz/225ml) milk
  • 1 teaspoon vanilla extract, optional
  • 4 cups (20oz/568g) strawberries, quartered
  • ½ cup (4oz/115g) cream cheese, diced
Instructions
  1. Preheat the oven to 350°F (180°C).

  2. Melt the butter and pour into a 9x13 inch (23 x 33 cm) baking dish.

  3. In a bowl, whisk flour, sugar, baking powder and salt until combined.

  4. Add the egg, milk and vanilla extract and whisk until smooth.

  5. Pour mixture over butter into the dish but do not stir.

  6. Place strawberries evenly over the batter, and then dot with the cream cheese.
  7. Bake for 45 minutes, or until the top is golden brown and the fruit is bubbling. Serve warm with vanilla ice-cream. Store leftovers in the fridge for up to 3 days.
