Boozy Piña Colada Popsicles

Take my incredible Piña Colada Popsicles recipe, make it adult and a little boozy, and you've got one incredible way to beat the heat!

Ingredients
  • 2 cups (16floz/480ml) pineapple juice
  • 1 cup (8floz/240ml) coconut milk
  • ½ cup (4floz/120ml) dark rum (omit for non-alcoholic popsicles)
  • juice of 1/2 lime
Instructions
  1. Pour all ingredients in a large measuring cup. Stir to combine.

  2. Pour into popsicle molds, place a popsicle stick into each mold and cover. Freeze for 8 hours or until frozen firm.

  3. Run the mold under hot water to cleanly release the popsicles. Store in the freezer for up to 6 weeks.
