Puree the strawberries and honey in a food processor until liquified.
With an electric mixer, whisk the butter until fluffy.
One spoon at a time, whisk the strawberry puree into the butter until fully incorporated.
Transfer to plastic wrap and shape it into a log.
Place in the fridge to firm for at least 2 hours or up to 7 days. It can also be sliced and frozen for up to 2 months.
