Ingredients
3tablespoonsred kidney beans
3tablespoonscorn
3tablespoonscarrots, finely chopped
1tablespoonsonion, finely chopped
6tablespoonscanned tomato/ tomato sauce
1/2teaspooncumin
1/2teaspoonchili powder
1teaspoonworcestershire sauce(optional)
1/2teaspoondried chili or tabasco sauce
Instructions
In a medium sized microwaveable mug, combine all of your ingredients.
Cover with cling wrap and store in the fridge for up to 3 days.
When ready to eat remove the cling wrap and microwave for 2 to 2 1/2 minutes. This is just to heat through all ingredients.
Serve topped with sour cream, avocado and chopped green onion.
