Cool off on a hot summer day with my rich and refreshing Mint Chocolate Chip Popsicles you can make at home with just a few ingredients.

Ingredients
  • 2 cups (16oz/450g) greek yogurt
  • 1/2 cup (4floz/115ml) milk
  • 1/4 teaspoons mint extract
  • 3 tablespoons sugar
  • 1/2 cup (3oz/85g) chocolate, chopped
  • Green food coloring (if desired)
Instructions
  1. Whisk together the yogurt, milk, mint extract, and sugar.
  2. Add in enough green food colouring to reach your desired shade.
  3. Stir in the chocolate chips, then pour the mixture evenly into 6 popsicle molds.
  4. Insert your popsicle sticks and freeze for 4-6 hours until solid or preferably overnight.
  5. To remove the popsicles from the mold run under warm water for about 5 seconds. Gently pull on the sticks to release.
  6. Enjoy immediately, or store in the freezer for up to 8 weeks.
