Learn how to create Rocky Road Fudge Made in the Microwave with my easy recipe and you'll have an incredible dessert you can make in no time at all.

Course: Dessert
Cuisine: American
Servings: 40 pieces
Author: Gemma Stafford
Ingredients
  • 3 cups (16oz/454g) semisweet chocolate, chopped
  • 1 (14-ounce) can sweetened condensed milk
  • 2 tablespoons (1oz/30g) butter
  • 2 cups (6 oz/170g) marshmallows, roughly chopped
  • 3/4 cup (4 oz/115g) roasted salted peanuts, roughly chopped
Instructions
  1. Line an 8x8 inch baking tray with parchment paper.
  2. Add the chopped chocolate, sweetened condensed milk, and butter to a large bowl.
  3. Microwave for 1 minutes and stir. Place back into the microwave at 30 second intervals until the chocolate has melted. Note: Try not to stir the fudge mix too much as it can cause the fudge to separate.
  4. Once melted, add in the chopped peanuts and marshmallow and gently fold in.
  5. Add the fudge to the prepared baking pan and smooth it out.
  6. Transfer fudge to the refrigerator for 3-4 hours or until the fudge is solid enough to cut into squares.
  7. Cut into small pieces and enjoy! it will keep happily in the fridge for 2 weeks.
