Ingredients
  • 4 tablespoons Shortbread cookie butter
  • 4 tablespoons milk (I used fat free, but other versions should work)
  • 4 tbsp all purpose flour
  • 1/2 tsp baking powder
Instructions
  1. In a large, microwave-safe mug, add all ingredients in the order listed.
  2. Mix with a small whisk until batter is smooth and no flour lumps remain.
  3. Cook in the microwave for about 45 seconds. Check on it and cook for another 15 seconds if needed (timing based on my 1200watt microwave)
  4. Let cake cool a few minutes before eating.
