Classic Cherries Jubilee

There's nothing better than my Cherries Jubilee recipe flambéd and poured over sweet & cold vanilla ice cream!

Ingredients
  • 3 cups (15oz/426g) fresh cherries, pitted
  • cups (2½oz/71g) granulated sugar
  • 1 tablespoon lemon juice
  • cup (2½floz/71ml) kirsch or rum
  • Vanilla ice cream (for serving)
Instructions
  1. Combine the cherries, sugar, and lemon juice in a large skillet over medium heat. Cook for 5-8 minutes until the sugar dissolves, and the liquid is syrupy.

  2. Remove the skillet from the heat and carefully pour in the kirsch or rum.

  3. Return the skillet to the heat and carefully ignite the alcohol with a long fireplace match or utility lighter.

  4. Gently swirl the cherries in the pan until the flame subsides, in about 45 seconds.

  5. Serve the hot cherries immediately over scoops of vanilla ice cream. Enjoy!
