Two mugs of Mexican Hot Chocolate

Ingredients
  • 3 cups (24floz/720ml) whole milk
  • 1 cup (6oz/170g) bittersweet chocolate (finely chopped)
  • 1 tablespoon granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper (plus more for serving)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Lightly sweetened whipped cream (for serving)
Instructions
  1. Bring milk, chocolate, sugar, cinnamon, and cayenne pepper to a simmer in a medium saucepan over medium-low heat, whisking frequently, until mixture is smooth and creamy and chocolate is melted, about 5 minutes. Don't allow the mixture to boil.

  2. Remove from the heat and stir in the vanilla extract and salt.

  3. Divide hot chocolate among mugs. Top with whipped cream and dust with a little extra cayenne pepper.
