My Light & Refreshing Lemon Gelée is a citrus-forward gelatin that's softer and more luxurious than your regular Jell-O desserts!

Ingredients
  • 1 ½ cups (12 fl oz/360 ml) filtered water
  • ½ cup (4 oz/120 ml) freshly squeezed lemon juice (strained)
  • 2 ¼ teaspoons gelatin powder
  • ¼ cup (2½ oz/71 g) honey
Instructions
  1. Place 4-6 small glasses, bowls, or teacups on a tray and set aside.

  2. In a small saucepan, combine the water and lemon juice.

  3. Sprinkle the gelatin on top and let it sit for 5 minutes to allow the gelatin to bloom.

  4. After five minutes, place the saucepan over low heat and warm until the gelatin dissolves.

  5. Remove from heat and stir in the honey. Taste and add more honey if desired.

  6. Divide the mixture evenly between the prepared glasses and refrigerate, uncovered until set, about 4-6 hours.

  7. Store set gelee covered in the refrigerator for up to 3 days.
