Servings: 40 crackers
Author: Gemma Stafford
Ingredients
  • 1 ½ cups (7 ½ oz/213 g) all-purpose flour
  • 1 teaspoon salt
  • 7 tablespoons (3 ½ fl oz/105 ml) water
  • 2 tablespoons vegetable oil
Instructions
  1. In a medium bowl, stir the flour, salt, water and oil together until moistened.
  2. Turn the mixture out onto a floured surface and knead until smooth, using a touch more flour if the dough is very sticky and a bit more water if the dough seems dry.
  3. Wrap the dough well and let rest for 1 hour to relax the gluten.
  4. When ready to bake, preheat the oven to 350°F (180°C) and line 2 baking sheets with parchment paper.

  5. On a floured surface, roll the dough as thin as possible. Using a 3-inch (7 ½ cm) round cutter, cut as many circles as you can and place on the prepared baking sheets. (They will shrink as they bake so no need to space them out.) Prick the crackers with a fork in a few places.

  6. Bake one tray at a time for 10-12 minutes, until lightly golden.
  7. Once completely cool, place in an airtight container for up to one week.
