Ingredients
  • 3 tablespoons unflavored powdered gelatin
  • 2 tablespoons (30 ml/1 fl oz) water
  • 1 cup (8 fl oz/240 ml) pure fruit juice, strained
  • 2 tablespoons honey (or agave)
  • 1 tablespoon fresh lemon juice
Instructions
  1. Place a silicone gummy bear mold on a baking sheet and set aside.

  2. Bloom the gelatin: in a small bowl, combine the gelatin with the water. Stir and let sit while you prepare the remaining ingredients.

  3. In a small saucepan, combine the juice, honey (or agave) and lemon juice, and bring to a simmer over medium heat.

  4. Remove from the heat and stir in the gelatin for a few minutes, until completely dissolved.

  5. Pass through a sieve and into a jug with a pour spout to ensure that the mixture is free of small lumps or pulp.

  6. Pour the mixture into the gummy bear molds and refrigerate for 4 hours, until completely set.

  7. Pop the gummy bears out of the molds. Store in an airtight container in the refrigerator for up to 2 weeks. (If stacking, use parchment paper between the layers.)
