My Banana Bread Pudding recipe is exactly as it sounds — delicious banana bread combined with sweet and lovely bread pudding!
Preheat the oven to 350°F (180°C) and butter an 8x8-inch baking dish.
Slice and cut the banana bread into small cubes. Place into the buttered dish.
In a medium bowl, mashed banana with a potato masher or fork until fine.
Next, add in the eggs, sugar, milk, cream, vanilla extract, and salt and pour evenly over the banana bread. Let soak for a minimum of 30 minutes but up to 4 hours. Push the bread down into the custard to ensure it all gets well soaked.
Bake for about 50-60 minutes, or until golden brown on top.
Serve warm with vanilla ice cream on top.
