Ingredients
  • 4 cups (16 oz/450 g ) chopped frozen pineapple
  • 1 cup (8 oz/225 g) coconut milk (low fat or full fat)
Instructions
  1. Place the frozen pineapple and coconut milk into a food processor or high-powered blender.

  2. Turn on the food processor and blend until the consistency becomes creamy. You might have to stop several times and scoop down the pineapple.

  3. Keep blending until all of the pineapple chunks are gone and the mix is smooth.

  4. Enjoy immediately as it is ‘soft serve’ and should be eaten straight away.

  5. If you want to freeze a little you can, just know it does freeze solid once frozen and is no longer soft.

Recipe Notes
  1. Normally 16oz = 2 cups, not 4. However, the weight of pineapple is very different from what we normally weigh in a cup — like flour — so both measurements are right. The pineapple is chunky and big and doesn't fill a cup the same way flour would.
  2. You can use low-fat beverage coconut milk for a lighter taste or full-fat canned coconut milk for more richness.
  3. Measure roughly 1/4 less if using crushed frozen pineapple, or add more coconut milk to get the desired consistency.
  4. You can use my recipe and add some vanilla ice cream. The fresh pineapple flavor goes perfectly with the ice cream.
