Ingredients
  • 4 cups (16 oz/450 g) cubed frozen pineapple
  • 1 cup (8 oz/225 g) coconut milk
Instructions
  1. In the bowl of a food processor (or high-powered blender), add the frozen pineapple and coconut milk and blend on medium-high speed for about 3 minutes or until the consistency is smooth and creamy. Stop blending when it is smooth as over blending will thin it out.

  2. Enjoy immediately, as this is ‘soft serve’ and should be eaten straight away! For longer storage, you can freeze it in an airtight container for up to 3 weeks. However, this does freeze solid so make sure to let it thaw for 5 minutes on the countertop before serving.

Recipe Notes
  • Note the weight. Frozen pineapple is measured differently by volume and weight. Because pineapple chunks don't pack tightly into a cup, 4 cups of frozen pineapple weigh about 16 ounces.
  • Lower-fat option: You can use low-fat beverage coconut milk in this Dole whip recipe for a lighter taste or full-fat canned coconut milk for more richness.
  • Crushed pineapple tip: Measure roughly 1/4 less if using crushed frozen pineapple, or add more coconut milk to get the desired consistency.
  • Serve with ice cream. For an indulgent treat, use my homemade vanilla ice cream recipe and serve a scoop with the Dole whip.
  • Make a Dole Whip cocktail. For a grown-up treat, blend in 1 or 2 tablespoons of white or dark rum.
    • Garnish with a maraschino cherry or a pineapple wedge for a fun touch.
