Make a healthy and delicious Breakfast Parfait for Mother's Day Brunch to show your mom how much you care this Mother's Day.

  • 1/2 cantaloupe , seeds removed
  • 1/2 cup (4oz/120g) vanilla greek yogurt
  • 1/4 cup (11/2oz/45g) granola
  • 1/2 cup (21/2 oz/75g) of your favorite mixed berries (I used strawberries and blueberries)
  1. Cut open the cantaloupe. Using a spoon scoop out the seeds from the center and discard.
  2. Fill the hole with the yogurt.
  3. Top generously with berries and granola arranging in groups.
  4. Garnish with fresh mint and enjoy!
