Recipe Notes
  • Frozen pineapple will allow this recipe to set up faster but you can use fresh pineapple instead. You may need to increase the freezing time by an hour or two.
  • You can use lowfat or nonfat yogurt but for the creamiest results, use full fat yogurt.
  • If you want to increase the coconut flavor, you can use a coconut flavored yogurt or a coconut milk based yogurt.
  • For a refreshing variation, try replacing the lemon juice with lime juice and a few gratings of fresh ginger root.
  • This is best when eaten a within two weeks of making it as it can become a bit icy in the freezer after a while.
