Hi Bold Bakers!

This might be one of my boldest videos yet because I’m baking with none other than Jenn from Cookies Cupcakes and Cardio. I am beyond thrilled to work with Jenn since she is an incredible cake decorator and one of the YouTube Bakers I admire the most. Her channel Cookies, Cupcakes and Cardio is chock-a-block with incredibly decorated cakes, cookies and desserts.

We are making Disney Princess Cupcakes, from Frozen’s Elsa to Sleeping Beauty’s Aurora and many more. I’m showing you how to make amazing colorful marbled cupcakes and Jenn is going to show us how to beautifully decorate them on her YouTube channel.

For these cupcakes I am using my master recipe for Madera cake/Victoria Sponge. In Ireland we call them buns, not cupcakes. Kids in Ireland make a lot of buns and it was the first recipe I ever memorized. It’s so easy to remember I still know it after all these years later.

Once you learn how to make my marbled cupcakes, then go over to Jenn’s channel, Cookies, Cupcakes and Cardio to watch how to create the Disney Princesses.

  • 1 Cup/225g/8oz butter softened at room temperature
  • 1 Cup/225g/8oz sugar

  8. Bake for 20-25 minutes, or until golden-brown on top and a skewer inserted into the middle comes out clean.
  9. Remove from the oven and set aside for 5 minutes, then remove from the tin and place onto a wire rack. Once cold store in an airtight container for 3-4 days.
  10. Decorate your cupcakes however you like them.

Hi Gemma. I love your website and your recipes! But when I made these cupcakes, they didnt turn out like your. The only things I did differently were the addition of vanilla and not coloring them with food coloring. They were flat on top and didnt rise like yours. What do you think could have gone wrong?

    • Profile photo of Gemma Stafford on August 17, 2015 at 1:24 pm

I think they may need to be cooked a bit longer next time. Be sure to keep an eye on it. Every oven is different. Hope this helps 🙂

Hi Gemma! I love your website and your recipes! I made these cupcakes yesterday and mine didn’t turn out like yours. They didn’t rise like yours did. They flattened out and didn’t have the same texture as your when I cut one in half. I added vanilla and didn’t color the batter, but those were the only changes I made. What do you think could have gone wrong? Thanks!

    • Profile photo of Gemma Stafford on August 17, 2015 at 1:13 pm

Sounds like you may need to cook your cupcakes a little bit longer. Hope this helps 🙂

Hi Gemma! This video was so fun to watch!!! Loved the collaboration project!!! Super cute!!! Can you make a version of Williams-Sonoma’s “Ultimate Pumpkin Blondie”? There are three layers and I was hoping you could find a way that us people at home could make it? It looks really good and decadent. Thanks!

    • Profile photo of Gemma Stafford on August 17, 2015 at 1:14 pm

Thanks for your request, Jen. I will add it to my list 🙂

Hi Gemma! Loved the video, great collaboration idea!!! Keep up the good work! I was hoping you could try a version of an “Ultimate Pumpkin Blondie”. I saw one from Williams-Sonoma, super decadent, and I thought you could make one so us people can do it at home? Thanks!
