I don’t need to tell you that breakfast is the most important meal of the day. We all know how important it is to start off the day with a homemade nutritious meal. I wish I could wake up every day and make Kevin and I a homemade breakfast. The reality is most of our mornings are packed and we just have to grab and go, or even worse, we skip breakfast all together. With my Make Ahead Microwave Mug Quiche, you never have to worry about your breakfast again.
My Microwave Mug Quiche will blow you away. This is no egg hack or imitation, this Quiche is complete with savory crust, gooey cheese and salty ham. This is the prefect single-serving breakfast. I love to meal prep a few of these over the weekend that way when the busy week arrives I’m ready.
Preparing this Microwave Mug Quiche only takes minutes. I start with just a few simple ingredient in the bottom of my mug to make the crust. On top of that I crack an egg, add a splash of milk and my favorite part–the ham and cheese. To save it for later, I simply cover it up with cling wrap and pop it into the fridge.
The next morning all I do is scramble my eggs and microwave this baby for just 2 minutes. Who could resist a homemade breakfast that takes less than 5 minutes to make and cook? This make ahead rendition of a Microwave Mug Quiche will make your mornings easy and get our day off to a great start.

Microwave Mug Quiche Recipe
Ingredients
- 4 tablespoons all purpose flour
- ⅛ teaspoon baking powder
- 1/16 teaspoon baking soda
- ⅛ teaspoon salt
- 3 tablespoons milk (for the pastry)
- 1 tablespoon olive oil
- 1 egg , beaten
- 2 tablespoons milk (or water, for the quiche filling)
- 2 tablespoon cheese , grated
- 1 tablespoon cooked ham , chopped
Instructions
- Mix the flour, baking powder, baking soda and salt together in a microwavable mug
- Add in the milk and oil with mix together. There might be some lumps but that is ok. This is the pastry layer of your quiche.
- On top of the "pastry layer" add in your egg, milk (or water), cheese and ham. Mix all together gently while not disturbing the pastry layer.
- Microwave for 1 minute 20 seconds - 2 minutes, or until it rises up and the egg is cooked and firm on top.
- Enjoy straight away!
I’ve made this recipe almost a dozen times now and it’s great very time. I use vegetables instead of ham; I’ve tried olives, broccoli, and red pepper and they were all delicious! I also like to add some fresh thyme to the egg mixture. I never knew eggs could cook so well in the microwave!
Gemma, I love this Mug Quiche recipe and make it frequently. Usually, I double the egg filling portion for a more hardy breakfast and microwave 3 minutes on high. Works great! Today, however, my milk was sour. I happened to have a little buttermilk on hand and replaced the milk with buttermilk….. AMAZING! I’m not sure I can go back! The crust was incredibly tender and eggs so flavorful. I thought I’d post this for others who might be in this predicament. Thank you for the lovely recipes.

I’ve made this recipe so many times I have it memorized. It’s a perfect quick lunch. I sub 2 tablespoons of flour for wheat flour, and add green onions, shredded cheese, and bacon bits. The egg cooks better for me if I only add one heaping tablespoon of milk instead of two. I just tried mixing it up the day before (not microwaving) and keeping it in the fridge and it turned out perfectly!
I have neve made this mug breakfast and I have no Idea what it tastes like.What does a quiche taste like?

Hi Gemma, Thank you so much for this recipe! I added black sesame seeds and sunflower seeds to the dough to make it more healthy. I omitted the meat and cheese and it came out great. I was wondering, have you tried pie in the microwave, with proper buttery and flaky pie crust? Maybe even use store bought dough already rolled out. Perhaps just throw the dough into the jar/mug the same way you did with the breakfast burito flatbread. I wonder if that would work? Have you tried that? Can this be made without the crust
Thank you so much for this and all your recipes! (I love the Italian breakfast cake!). I made this today in a large ramakin. While it was tasty, there was too much dough for me as there was as much dough as egg. I will cut the dough in half next time. Also I used rice flour as I have a gluten sensitivity (sadly), and the rice flour worked well. Question: if instead of measuring the baking powder/soda, could we just use a mis like Bisquik? (If I can find their gluten free mix ;-). MANY THANKS

Hi,I am going to make your quiche in a mug after I go buy 2 ingredients.Can I put bacon or bacon bits instead of ham?How do I get the 1/16 from my measuring spoons?I am looking for breakfast in a mug cake to eat at home because I am bored eating my regular breakfast meals.
