Rainbow Mug Cake - Make this cake in the Microwave in MINUTES!

Ingredients
  • ½ cup (100g) sugar
  • 1 sticks (100g) butter, softened at room temperature
  • 2 eggs at room temperature , lightly beaten
  • 1 teaspoons vanilla extract
  • 1 cups (110g/ 4oz) All purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • pinch salt
  • red , orange, yellow, green, blue, food colouring
Instructions
  1. In a large bowl cream the sugar and butter together until light in colour and fluffy in texture - about 3 minutes. Use a hand whisk.
  2. Crack in an egg, mix in well, and follow with the next egg. Then pour in the vanilla extract. Beat for another minute until well combined.
  3. Add in the dry ingredients until just combined - don't over-mix!
  4. Divide the mixture as evenly as you can between 5 bowls.
  5. Add a couple of drops of food colouring to each bowl and mix very gently - again, do not over-mix!
  6. Spoon the colors between the 4 mugs one spoonful at a time. Lay the different colored cake batter on top to create a marbled effect.
  7. Microwave for 45 seconds (every microwave is different so cooking may vary).
  8. Take care not to overcook the cake or it will dry out fast.
  9. Decorate your cake with my cream cheese frosting

    Hi…. my son and daughters first attempted bake rainbow cake and they love it so much! My daughter told me the cake was fluffy ,bouncy and tasty!

    Hi Gemma,

    Big fan of your all your recipes especially microwave recipes, I wanted to try this rainbow mug cake as proper full batch cake (6” cake maybe) in microwave I know you have show this recipe for cake as well, but I think this recipe is even better and simpler also most imp can be done in a microwave I just wanted to know the proportions for it can you pls let me know….

      Hi Sonali! I’d recommend using my Microwave Cake recipe then use the same technique I did for the mug cake adding the different colors together. I hope you enjoy!

    Can we simply bake this like usual cupcakes. If Yes, for many minutes.

      Hi Vin,
      YES! You certainly may. This will bake at 180c/350f in about 10 – 15 mins. Use a muffin tray if using your oven, and make more than one!

    Hi Gemma! I was wondering what the texture of this cake is supposed to be. Is it supposed to be moist or more on the crumbly side? I cut the recipe in half and microwaved it for about a total of 65 seconds, and the cake turned out dry and crumbly. Thanks in advance for the help.

      Hi Frances,
      This is meant to be a moist sponge cake. I think you over baked it. Try baking for 45 seconds, then check it, press your finger to the top of the cake, it should feel barely firm to the touch, not wet, but firm. Remove from the oven and allow to sit, the heat continues to distribute.
      Ovens vary, you need to figure what timing is best for your model.

    Hi, I was wondering if you knew how long to keep the mug cakes in the microwave if it’s 900 watts. I love your mug cakes but sometimes making them gets a bit challenging x.x because of the cooking time. I hope you have a good day!

      Hi April,
      I hear you! My microwave is a really good modern microwave, and yours may indeed be different. That does not mean that you cannot bake well in yours. You need to learn to monitor the bake. So, for a mug recipe, bake at full power for 40 seconds, open the oven and take a look, reposition the mug if you like, and bake in 10 second intervals until the top of the bake feels barely firm to the tough, then STOP. Stand at room temperature for a minute or so to allow the heat to distribute, and then it is ready.
      Slightly under baked is better than over, so always monitor for best results. try it, experience is the best teacher of all,
