Microwave Mug Blondie Recipe
Ingredients
- 2 tablespoons (1oz/30g) butter, melted
- 3 tablespoons brown sugar
- 3 tablespoons milk
- ½ teaspoon vanilla
- 6 tablespoons flour
- 1/8 teaspoon salt
- 1/8 teaspoon baking powder
- 1 tablespoon white chocolate chips
- 4 caramel candies , chopped
- Ice cream and caramel sauce for topping (optional)
Instructions
- Melt butter in a large, microwave-safe mug,
- Add the brown sugar, milk and vanilla and mix until the sugar is dissolved
- Gradually stir in flour, salt and baking powder. Stir until well-blended.
- Add the white chocolate chips and caramel candies. Cover and store in the fridge for up to 2 days. When ready to eat, microwave for 1 minute and 20 seconds. If the batter looks a bit undercooked microwave for an additional 30 seconds until cooked.
- Top with ice cream and caramel sauce and enjoy!

Hi there Gemma, this recipe is very delicious! Do you have any mug dessert recipes that I could have the dry mix in like a quart mason jar and when I’m ready I can put like 3 tbsp (or whatever) of the dry mix in my mug with however much liquid? Hopefully that makes sense.
I saw this recipe and immediately went to my kitchen to try it out. I’m 14 and I’ve made my fair share of blondies, as they’re my favorite dessert. So I tried this out but used brown butter in place of the melted butter and ohmylanta these were out of this world good. I didn’t have any caramel candies so I replaced it with white chocolate and drizzled some of your fantastic salted caramel sauce on top. Thank you for this amazing cheat day treat Gemma 🙂 <3

These mug blondes do not have any eggs, so feel free to underbake them slightly in the microwave. I find that when I follow the cooking instructions to a tee, I overcook the white chocolate morsels and they get a bit chalky. This mug cake is very hot straight out of the microwave and will continue to cook if you let it cool. Would recommend that you cook your mug cake on a slightly lower power for the full time or shorten your time by 10-20 seconds.

I’ve never eaten a blondie before 😊 so I’m curious – is it supposed to be a little gooey on the inside? Or does that mean that I undercooked it? How do I know it is ready?
