Blondies are by far one the most popular baked goods around. For those of you who don’t know, a Blondie is like a brownie but without the chocolate. The result is a thick, moist and dense texture with a sweet caramel-like flavor. Well, now instead of taking 30-40 minutes to bake yourself a sheet of Blondies, you can make one in the microwave in just minutes! My Microwave Mug Blondie is the perfect single-serving treat. The best part is this baby can be made ahead and kept in the fridge, or simply warmed up for an after dinner treat or midnight snack.

I’m a strong believer in treating myself to something special every now and again. The trouble is it’s tough when sometimes you just want one slice of cake or one cookie but to get there you have to make an entire batch. This Make Ahead Microwave Mug Blondie is the perfect solution. Knowing I have dessert waiting for me at home really does bring me great comfort.

To prepare this Make Ahead Mug Blondie, I combine simple ingredients like flour, brown sugar, vanilla and butter. With the addition of chopped caramel candies and white chocolate chips, this Microwave Mug Blondie is perfection. I cover this up and pop it in the fridge so next time I need a sweet treat I know exactly where to go. All it takes is 1 minute in the microwave and before you know it, you have yourself the perfect little Microwave Mug Blondie. Just for you and in just minutes…who could resist?

  • 2 tablespoons (1oz/30g) butter, melted
  • 3 tablespoons brown sugar
  • 3 tablespoons milk
  • ½ teaspoon vanilla
  • 6 tablespoons flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking powder
  • 1 tablespoon white chocolate chips
  • 4 caramel candies , chopped
  • Ice cream and caramel sauce for topping (optional)
  1. Melt butter in a large, microwave-safe mug,
  2. Add the brown sugar, milk and vanilla and mix until the sugar is dissolved
  3. Gradually stir in flour, salt and baking powder. Stir until well-blended.
  4. Add the white chocolate chips and caramel candies. Cover and store in the fridge for up to 2 days. When ready to eat, microwave for 1 minute and 20 seconds. If the batter looks a bit undercooked microwave for an additional 30 seconds until cooked.
  5. Top with ice cream and caramel sauce and enjoy!

    I’ve been following Bigger Bolder Baking now for a while but this is the first recipe I’ve tried. I have to say I was pleasantly surprised!!!!!! I microwaved for a minute and 15 for fear I would over cook it (ahem, I have experience in over baking mug cakes!!!) and it was perfect! I didnt have any mix ins to add which was fine – this really was an amazing cake!!! And now my daughter is begging for me to make her one – always a good sign!

    Hi there Gemma, this recipe is very delicious! Do you have any mug dessert recipes that I could have the dry mix in like a quart mason jar and when I’m ready I can put like 3 tbsp (or whatever) of the dry mix in my mug with however much liquid? Hopefully that makes sense.

      Hi Tamra,
      yes, this sure does make sense. This is one I put together ( for the oven, but it should equally work in a microwave. However, these mug recipes are so quick to put together that, unless you have one that you use all of the time, it is as easy to do them one by one.
      Some are specific, and then you would need a different mix for every recipe, it is a dilemma!

    Thank you so much for these mug desserts, sometimes I just crave something sweet and yummy but want to make it quickly…this is just what I wanted! I split the batter between two cups and they came out wonderful-in taste and appearance!
    My sister wasn’t hungry so I ended up eating both of the blondies, hehe!

    I didn’t have brown sugar so I replaced it with white. But it came out amazing. Absolutely loved it. By far the best one. My birthday I coming up in 2 days and I want to make it for 4 people. Can you please tell me how much time it will take to microwave if I make it in one big bowl (quadruple the amount of everything) rather then 4 separate mugs?

      Really sorry for my late reply. A big mug cake could take anywhere from 2-4 minutes. It really depends on your dish.

      I recommend checking it every 30 seconds.

    Hi Gemma,

    I have been having your mug apple cake for breakfast for a couple of days now and I love it. Today I decided to go for this blondie cake instead and it turned out amazing! I recently became lactose intolerant so I had to switch the butter to Olive oil, the milk to soy milk, omitted the white chocolate and caramel then topped it with vegan icing. Heaven in my mouth! I am sure that the original recipe is even better but I am happy that with all of these substitutions, I still got an amazing result. Thanks for all the goodness ❤️

    Do I need to make the batter 24 hours in advance for it to have that fudge-like consistency? Will it affect the texture of the finished product?

      No just mix it up and cook it off straight away. When you decide to cook off your blondie won’t affect the texture.

      We will pay closer attention to this issue going forward, I know it matters to people.
      For this one I would say about 180 calories.
      There are a number of good calculator apps out there on the web, it is worth having one on hand.

    I used white sugar instead of brown, so the color was no that good but tasted good. I have tried few of your recipes till now and love how simple the method is and how few ingredients you us. I have two 6 month old kids and Time is important ????. I absolutely love your recipes and I watch these videos while I feed my kids to keep myself busy. Thank you for posting you recipes and also keeping it so simple that even I think I can bake ( which have been my dream since long).

    I have tried over 15 of your microwave mug recipes, and I can say that your mug Blondie recipe is BY FAR the best microwave meal I have ever had in my entire life(I’m only 14 though). I would definitely recommend it.
    Can you please make a Blondie recipe ( oven ) ?

      Hi there,
      I am not sure if this is a good thing, or a bad thing! Are you have difficulty with one recipe in particular?
      the usual difficulty arises with either over-baking, or under-baking. So, bake for 40 seconds, check it, if it is very soft return for 10 seconds, and cherck again, keep going until it is barely firm to the touch. That will do it!

    I saw this recipe and immediately went to my kitchen to try it out. I’m 14 and I’ve made my fair share of blondies, as they’re my favorite dessert. So I tried this out but used brown butter in place of the melted butter and ohmylanta these were out of this world good. I didn’t have any caramel candies so I replaced it with white chocolate and drizzled some of your fantastic salted caramel sauce on top. Thank you for this amazing cheat day treat Gemma 🙂 <3
