Hi Bold Bakers!

Coming into the holiday season, I like to have no-bake pie recipes on hand. My reason being, they are so simple to make, they don’t take up space in the oven, and they can be made days in advance. So when the kitchen is bustling with people and turkey, you can rejoice in knowing you have dessert covered.

In California we are fortunate to have a great climate for growing fresh raspberries year round so I can use them in my baking and desserts whenever I wish. All of our sunshine yields us wonderful fruit which gives me more dessert options any time of year.

Sometimes I have the tendency to bake with heavier ingredients because I’m not eating dessert every day so I go all out for a treat. I have to remind myself about how wonderful recipes using ingredients like fresh fruit, toasted nuts and vanilla can be. And of course, they are still satisfying my insatiable sweet tooth.

This No-Bake Raspberry & Pistachio Pie combines two flavors that marry so well together: Raspberries and Pistachios. Its a pie with a creamy nutty center, fresh raspberries and a cookie crust which is my kind of heaven.

Using fresh raspberries really elevates this dessert, and if you wanted to add in whole raspberries to the creamy filling that would work great too. Also get creative with your crust and use any cookies that are your favorite.
