Ingredients

  • 1 egg
  • 5 tablespoons milk
  • 5 tablespoons white bread , cubed (roughly 1 slice bread)
  • 3 tablespoons grated cheddar
  • 3 tablespoon cooked ham
  • Salt and pepper to taste

Instructions

  • In a microwave safe mug, mix together the egg and milk.
  • Add the bread, ham, cheese and salt and pepper. Stir until combined.
  • Let it stand for 5 minutes for the bread to soak up the custard. Press it down so the bread is submerged within the liquid.
  • Microwave for roughly 1½ - 2 minutes. I suggest checking it after 1 minute and go from there. The timing is based on my 1200W Panasonic Inverter Microwave so yours might vary.
  • Serve straight away while still warm.

They can be mixed up in advance for an even speedier meal

I’ve made several of these mug meals now and they are all amazing. I actually made this for my family for dinner, as I had eggs that needed to be used up. I added spring onion and cherry tomatoes. It’s so hot right now (Australia) that I didn’t want to use the oven or stove. This went down very well and my kids asked me to put it on a list of ‘favourite dinners ever’! It was so quick and easy and my kitchen is not roasting hot. Win!

I had to substitute bread for breadcrumbs since we apparently didn’t have any whole bread left. Still tastes delicious! Thank you for the recipe

Seems like it’s too runny, even after 2-1/2 mins in a 1200 watt microwave. Help!

Hi Gemma,
I’ve made 3 of these today for breakfast and they were fantastic! I’ve added spring onions on top and we devoured them – thank you Gemma for this great recipe! I’ve made them in ramekins and there was a bit of overflow, but not too much – quite manageable… Thank you again, I will be making these again and again.

Hi Gemma,
I’m 12 years old and I love your mug recipes i use them as an afternoon snack when I come home from school. I love to cook and bake and have been baking ever since i was 4. These mug recipes also keep my mum happy as they have no mess at all. I was wondering could you leave out the ham or replace it with something else because I have run out of ham.
