Pancake Tuesday is here! For those of you who have not experienced a Pancake Tuesday allow me to fill you in. It is a delicious day when your Mammy makes crepes with lemon and sugar for you when you get home from school. Also known as Mardi Gras, Shrove Tuesday and Fat Tuesday. This day is the last hurrah before the beginning of Lent so you gotta make it a good one.
Although in Ireland we made crepes, many people would also make American Buttermilk Pancake. These thick and soft pancakes are like a sweet sponge for maple syrup. I didn’t have these until I came to the U.S. and instantly became obsessed with finding the best ever recipe for them. I think I succeed after years of testing and then some.
