Hi Bold Bakers!

Summer isn’t over yet so let’s make the most of it with my trio of NEW Homemade Popsicles. My Original Homemade Popsicles were such a hit and these new ones are creamy, a little more decadent, and definitely BIG & BOLD!

The flavors that I chose are regulars on Bigger Bolder Baking simply because they are fan favorites and get a huge reaction whenever they make an appearance.

Cookies & Cream Popsicle

Oreo Cookies are very popular in my house. They are so versatile and that’s one of the reasons I love them. I could not make homemade popsicles without adding this flavor to the list.

Ingredients

  • 14 chocolate cookies , about 4 oz (115g)
  • 3 tbps sugar
  • 1/2 cup (4 fl oz/115mL) yogurt /sour cream
  • 1/4 cup (2 fl oz/60mL) whole milk
  • 1 cup (8 fl oz/250mL) cream
  • 1 tsp vanilla extract

Instructions

  • Working in a small bowl, crumble the cookies to make pieces, some big and some small.
  • In a bowl, stir together the sugar, yogurt, milk, cream, and vanilla. Add the crumbled chocolate cookies and stir to mix.
  • divide the mixture across the molds. Cover and freeze until solid, at least 4 hours.

Raspberry Lemon Cheesecake Popsicle

I am a Cheesecake fiend, so it only seems right that I make a homemade popsicle version. It’s like a slice of Raspberry Cheesecake on a stick. Delicious!

Raspberry Lemon Cheesecake Popsicles

Ingredients

  • 8 oz (1 cup/ 225g) cream cheese (at room temperature)
  • 3 tablespoon sugar
  • 2/3 cup (5 1/2oz/165g) yogurt (natural or greek)
  • 1 tsp vanilla extract
  • 15 Raspberries , pureed
  • ½ lemon zested
  • 1/2 cup (4oz/ 115g) graham cracker crumbs (digestives, )

Instructions

  • In the bowl whisk together the cream cheese, yogurt, vanilla and sugar. Set aside
  • In a food processor (or blender), puree the raspberries until no lumps.
  • In a small bowl break cup the graham cracker crumbs until fine crumbs
  • Gently fold the cream cheese mix, raspberry puree and cookie crumbs
  • Scoop the mixture evenly into popsicle molds. It is a thick mix so tap it on the counter to move the mix down the mold. Add popsicle sticks to the center of each cup.
  • Place into freezer until fully frozen, at least 4 hours.

Homemade Nutella Popsicles

Ingredients

  • 2 large ripe bananas , peeled
  • ½ cup (4oz/225g) ) Nutella
  • Pinch of salt , optional

Instructions

  • Blend the overripe bananas until completely pureed.
  • Add nutella, and blend until completely mixed in.
  • Pour into popsicle molds with sticks and freeze for 4-5 hours.
  • Keep for up to 2 weeks and enjoy!

Hello, Gemma.
Recently I discovered your youtube channel and your website. I tried to do some of popcicles from this page. For example i did Cheesecake popcicles. It was tasty, but it has a sour taste. Unfortunatly in my country (Israel) cream cheese has a sour taste even if it fat. So I used 5% fat ricotta cheese instead and a taste was realy great.

Hella Gemma, for the recipes that suggest heavy cream, like one of your popsicles, can I substitute whip cream for heavy cream, to lower the fat content? Thanking you in advance 🙂

We recently came back from holiday and the kids were loving Simmo’s ice cream (Western Australia). I wanted to try and make a “healthier” homemade version, so tried the cookies and cream popsicles. My son ate 1/2 of them in a day (6), and while I had 1, hubby and daughter ate the rest (all gone in 1 day!). Needless to say, very popular in this house. Thanks for recipe. 💜
