The Best Way to Reuse Thanksgiving Leftovers
This pie recipe is the perfect way to give your leftovers a second life. With layers of ham, turkey, stuffing, mash brought together with gravy and cranberry sauce, this a whole new meal for your family to enjoy. And if you’ve had your fill of turkey and all the trimmings and don’t feel like eating this pie straight away, then simply assemble and pop the unbaked pie in the freezer for a later date.
How Do I Make A Savory Pie Crust?
Have you made my sweet Pie Crust? Ok well, it’s the same method, but without sugar. You’ll love my Savory Pie Crust recipe. This recipe is what we would call ‘short’ in the baking world. This means it has lots of butter (almost 1/2 butter to flour) which makes for a very flaky, delicious dough. It’s really a beautiful dough to work with and it freezes really well so you can have some ready to go in the freezer.
What Can I Add To A Thanksgiving Leftovers Pie?
This is the kind of recipe that lets you have flexibility and be creative. If you want to use up your leftover peas and carrots, add them to create something like a turkey pot pie. And if you want to leave out anything that I suggest, like the mash or ham, go for it! There is really no wrong way to make this recipe.
How do I Store Thanksgiving Leftovers Pie?
Store your Thanksgiving Leftovers Pie covered well in the fridge. To reheat it, cover well and then bake it in the oven at 350°F/180°C for 20 to 25 minutes, or microwave on high for 3 to 5 minutes, depending upon how much pie you have left.
How Long Does Thanksgiving Leftovers Pie last?
This leftover pie will last in the fridge for up to four days, but you can also freeze it (unbaked or baked) for up to 4 weeks.
Tip and Tricks to Making Thanksgiving Leftovers Pie:
- You can use Homemade Savory Pie crust or good quality store-bought pie crust.
- Get creative and add any leftovers, like cooked carrots or peas, into your Thanksgiving Pie.
- Assemble your pie the day before and bake it off fresh the next day.
- Unbaked or fully baked pies will freeze really well for up to four weeks.

Thanksgiving Leftovers Pie Recipe
Ingredients
- 1 recipe savory pie crust
- 3-4 slices roast turkey
- 3-4 slices cooked ham
- 2 cups (6oz/170g) gravy
- 2 cups (6oz/170g) mashed potatoes
- 2 cups (6oz/170g) stuffing
- 1 cup (6oz/170g) cranberry sauce
Instructions
- Butter a 9-inch pie pan or casserole dish. Set aside.
- Divide your pie crust into 2/3 and 1/3 pieces. The larger piece of pastry is for the base and the smaller for the top.
- On a floured surface, roll out the larger piece of pastry a little less than 1/4 inch thick.
- Carefully lay your pastry into the buttered pan leaving some extra pastry hanging over the edges in case your dough shrinks.
- Roll out the smaller piece of pastry to the same thickness and set aside.
- Building your Thanksgiving Leftovers Pie: In the base lay some ham and turkey. Follow that with a 1/2 the gravy to keep the meat moist.
- Next add a layer of mashed potatoes, stuffing, and of course, the rest of the gravy. You can tell by now that this is going to be a big pie!
- Finsh the pie with non other than a nice thick layer of cranberry sauce.
- Glaze the rim of the pie and carefully lay on the final piece of pastry, sealing and crimping the edges. Egg wash the top and make some slits for steam to escape. Chill the whole pie while the oven pre-heats.
- Bake the pie at 375°F (190°C) for roughly 45-55 minutes or until the pastry is a lovely golden brown.
- Allow cooling for 30 minutes once it comes out of the oven and then serve. Store remaining pie covered in the fridge for up to 4 days. This pie will also freeze well.
Omg…Made this with mine (minus mashed potatoes i made into flatbread to go along with a Turkey dumpling soup) First successful, whole pie and it was sooooo good. I love turkey n wondered what to do with the rest of the leftovers. This is perfect n freezable. I just cut a slice of pie and warm it in a covered pan on low with a lid (i sprinkle a little water on the lid). Best breakfast over mmmmmm. Ty ty ty i will certainly be doing this again.

I make a similar pie or casserole with leftovers. I layer shredded turkey, topped with gravy, a layer of stuffing, topped with gravy and the top is mashed potatoes, dotted with butter. Bake approx. 25-30 min. at 350 degrees. I think it’s the gravy that makes this dish.
That looks amazing. Could you add vegetables as well. I’m not fond of meat and do a nice nut and mushroom loaf. So that would be my base. ????

We have done this for several years…. We call it “Goodbye Turkey” (haven’t put in ham but, will try ) I always have to remember to bake extra stuffing because my sons (now all grown and gone) love it so much !!
How do you make your gravy?? Irish gravy does not look like that.
