Hi Bold Bakers!

Pancake Tuesday is here! For those of you who have not experienced a Pancake Tuesday allow me to fill you in. It is a delicious day when your Mammy makes crepes with lemon and sugar for you when you get home from school. Also known as Mardi Gras, Shrove Tuesday and Fat Tuesday. This day is the last hurrah before the beginning of Lent so you gotta make it a good one.

Although in Ireland we made crepes, many people would also make American Buttermilk Pancake. These thick and soft pancakes are like a sweet sponge for maple syrup.  I didn’t have these until I came to the U.S. and instantly became obsessed with finding the best ever recipe for them. I think I succeed after years of testing and then some.

To celebrate Pancake Tuesday, I put together a list of my Top Pancake recipes. No matter which recipe you pick you won’t go wrong.

    Hi Gemma! I was trying to show my dad your video for making your buttermilk pancakes, but the only one I can seem to find is the one for 1:46, but I know I saw one where you were actually talking to the camera and doing the demonstration and it’s was more like 3 – 5 min. But I can’t seem to find it anywhere now.

    Gemma how long does it normaly take you to make these pancakes

      Hi there,
      It should take you 5 mins to mix this recipe. If you do not over-mix this batter you can cook it almost immediately. Over-mixing the batter will stretch the gluten in the flour, and toughen the pancakes, so a nice light hand!

    Buttermilk is not available in my country, and I tried finding the homemade recipe on your website, but it seems like it doesn’t exist. Could you help me?

      Hi Jenny,
      I agree! this seems to be hiding on the website, I will try to correct this.
      So, this is a substitute for buttermilk: Take 1/2 liter of milk, full fat or low fat, add 1 tablespoon of white vinegar or lemon juice, allow to stand at room temperature until you see curds forming, then it is ready to use. for a natural alternative you can use 3/4 plain natural yogurt to 1/4 milk, my Mum uses this in her brown soda bread when she runs out of buttermilk,

    I know we have talked before but I love your videos and i’m always waiting for more, you really inspire people to bake. I might be only 12 but I know AMAZING bakers when I see them. I just wanted to say that i love your videos and that you are a very smart person, thank you for all your time and work to make videos they really make people smile.

    can u make normal pancakes with only 3 ingredients???

      Hi Roisin,
      Yes you can!
      40z of flour (plain/all purpose will be fine)
      1 egg
      About 1/2 – 1 pint of full fat milk. (Depending on how thick you like your pancakes)
      Sieve flour in to bowl, add egg and about 1/2 of the milk, whisk to mix, and decide how much more milk you need.
      Rule is the same, do not over-mix.

      Hi Gemma… I’m allergic to gluten so can I use gluten free all purpose flour for the crepes… ?

        I am not an expert in the is area of baking, it really is worth a try, there is no reliance on gluten in a pancake, just be cautious about over wetting it 🙂
