    GEMMA,
I love your baking and tips. Thank you for what I know to be time consuming work for us to get to do it simply. I made your cookie dough and added my own ingredients and won the cookie competition. I was so shocked to have won especially since it was my first time making cookies. EVER. I added to your crazy cookie dough
    2 cups Coconut
    2 cups Slivered Almonds
    2 cups Rice Krispies.

People are begging me for them all the time, and now get upset when I don’t bring them to dinners or our church bake sales. You said add anything so I added the things I love the most. Thank you.

YUM! What a fun cookie, next time send up a photo!

Hello Gemma! There is no nutter butter cookies in my country. Is this the same as Peanut Butter Cookies which is available and common here. Thanks in advance. You are such an angel. Thanks for help! God bless.

    • Gemma Stafford on November 1, 2018 at 8:49 am

Exact same, it’s just a peanut butter cookie :).

Really glad you like my recipes.
      Gemma.

    Hi Gemma,
These look delicious. I want to make the chocolate cups but instead of the cookie butter I want to put chocolate mousse/strawberry mousse as a filling. Once the mouse is set in the chocolate cups in the refrigerator, will pouring hot melting chocolate over the mousse not ruin it/cause it to become watery?

    Do advise.

    Thanks 🙂

    • Gemma Stafford on April 25, 2017 at 11:25 am

This depends on how hot the chocolate it! if you heat chocolate you will ruin it, it will seize! That means that it will become granular, and will not be salvageable.
You never heat chocolate beyond the point at which it melts, and then it will remain liquid for a time before it sets. Practice this, it is worth learning how to handle chocolate. Dark 70% ish chocolate will work best for you. Check out the Ganache recipe too,
      Gemma 🙂

  4. _Sam_ on March 9, 2017 at 6:04 am

And can you show us how to make hummus???

    • Gemma Stafford on March 10, 2017 at 5:10 am

      Hi Sam,
Yes, i will certainly let waffles come on camera more as time goes on, he is a little star!
Good job with using the oreo filling, what a great idea, well done you. Hummus is a great food, I will add this to my list, thank you.
      Gemma 🙂

  5. Margaret on February 13, 2017 at 11:27 pm

Hi Gemma, I came across the very attractive Oreo truffles and went immediately to look for in the recipe. The first ingredient says to use the Oreo cookie butter, but I don’t know how to make that first, to add to the other ingredients. Could you tell me how to do that, as I could not locate it.
They look absolutely delicious. Thank you. Margaret

    • Gemma Stafford on February 14, 2017 at 3:17 am

Can I melt chocolate chips for the chocolate?

  9. Elisanna Grace on February 6, 2017 at 10:49 am

I am not able to use any cookie for the peanut butter cups. I need to make them soon and I cant get any cookies. Can I just use peanut butter and put some powdered sugar?

    Please reply ASAP

    • Gemma Stafford on February 7, 2017 at 11:16 am

      Hi there,
Sure you can use semi-sweet choc chips for melting.
For the filling you can use 1 cup peanut butter + 1 cup powdered sugar + 1 tablespoon of unsalted butter + 1 teaspoon vanilla extract.
This will make a lovely filling for your peanut butter cups. Blend all of the ingredients together, you can do this by hand really easily.
      Follow the instructions from there!
      Gemma 🙂

  10. Caroline on December 9, 2016 at 11:30 am

    Hi Gemma!

I was wondering if for the oreo truffles, Can you use dark or milk chocolate instead of white?

    • Gemma Stafford on December 9, 2016 at 12:34 pm

Hi Caroline, dark chocolate is great for this, or sometimes I use a blend of dark and milk 🙂

  11. Rachaelcurtin on November 27, 2016 at 7:17 am

For the Reese’s i can use dark chocolate right, i’m not a big fan of milk chocolate.

  12. _Sam_ on October 1, 2016 at 3:31 am

  16. josey on April 23, 2016 at 9:14 pm

How many ounces are the cups you use for the mug menus? I think mine are too big.
Also where may we purchase those cute cups and saucers and mugs that are microwave safe?
Would it be out of line to ask for calorie info on the mug menus since I’m only allowed a certain amount per day.
    Thank you and best success.

    • Gemma Stafford on April 24, 2016 at 10:59 am

      Hi Josey,
first of all thank you for being in touch, I am happy to have you with us.
I use a 6 oz cup/mug, which is just right for a single serving. I buy these in all sorts of places, including charity shops, and i get them as gifts too. cups which are wide at the mouth work best in the microwave.
I will be launching a new website shortly, and one of the things I will focus on will be nutritional information, I know this is important to many of my followers.
      Gemma 🙂

  17. Janet on March 4, 2016 at 12:32 am

Hello Gemma, may I know if the cake using the shortbread cookie butter can be baked in an oven? Thank you

    • Gemma Stafford on March 4, 2016 at 3:28 am

Hi Janet, You could!. The idea behind mug cakes is to cut down on a number of things. The time, the cost of heating a big oven, and the ability to cook a small portion for one person. If you were to bake it in a traditional oven it will be only worth you while if you bake more than one. Then I would bake at 180 degrees for about 20 mins. The small batch cup cake recipe may suit you too!
      Gemma

      • Janet on March 26, 2016 at 6:13 am

Thank you so much! I will definitely try it out

  18. Neel12 on February 20, 2016 at 10:26 pm

    • Gemma Stafford on February 21, 2016 at 10:30 pm

HI, delighted you liked it. The great thing about the cookie butter is you can use any cookie. The only peanut butter cookie I know is a nutter butter. maybe have a look online for other options 🙂
