My Top Tips to Making Candy:

  • When making candy, If a recipe calls for a candy thermometer it’s very important to use one 
  • When your candy recipes are chocolate-based you don’t always need to temper your chocolate unless it is called for in the recipe
  • Take care not to over mix chocolate when making truffles or fudge. It can separate and become oily
