It’s time for more Mug Meals and this time it’s 3 breakfasts you probably didn’t know you could make in the microwave!!! Pop Tart in a Mug, Cinnamon Roll Oatmeal and Burrito in a Mug (Mugrito).
Breakfast has got to be the one meal that you never really know what you want or have the time to make it. I’m really bad at deciding what I want for breakfast, but one thing is for sure whatever it is I want it fast, and that’s why Mug Breakfasts are so great.
My Pop Tart in a Mug is something that is normally cooked in a toaster for breakfast but I’ll show you how good it is from the microwave!
Oatmeal is my go-to breakfast. I like to think of it as central heating for your body. Now, day in and day out, Oatmeal can start to get a bit boring, that’s why I like to give mine a little pizazz. I gave my Oatmeal a makeover and filled it full of the flavors of a Cinnamon Roll! Cinnamon inside and cream cheese sweetness on the outside. Let’s face it, if your breakfast doesn’t come with frosting on top you’re not living.
Don’t want sweet? How about a Burrito in a Mug? It is equally as good as one from a taqueria, except it will be cheaper and you are in control of what ingredients went in. You know those times you have leftover cooked sausage, rice or potatoes from last night’s dinner? Add those to your breakfast burrito. No waste and no fuss.

Hi Gemma, my strawberry pop tart didn’t turn out very well. The jam somehow “exploded” to the TOP of the pastry and the pastry was all mushy. Can you tell me what is the possible reason for that happening because I would love to try a pop tart but I wasn’t allowed to do I thought of making one in the microwave. I would like to try this again if I have the chance.

I’m sorry to hear that. So the jam can rise up a little so thats normal but it shouldn’t have been mushy. Mushy says to me its under cooked. Do you think it might have been under cooked? sometimes different microwaves takes longer or shorter time.

So I had to keep playing the beginning of this video about 50 times b/c as soon as my kids saw the sprinkles and heard the music they started dancing. It’s a sign! I have to do all these now. They love pop tarts and I haven’t had luck finding home recipes so this is a God send.

I’ve been thinking about the mac and cheese for several days and finally made it this morning. It was very delicious! Nice consistency of ingredients. Smooth and creamy. Very satisfying. All in minutes. Now I want another mug of it. haha I used sharp cheddar and whole milk. I also want to try the herb biscuit or potato soup next. mmmmm

Hi Gemma, my daughter and I are stoked to try your breakfast mug meals! One question though, I just found out through reading the comments that your mugs are only 6-8 oz, they seemed bigger. We’ve already bought some 16 oz mugs to use, and they are wide mouth. Will they still work? Should I double the recipes? Can I?

that is what happens on camera, it adds weight, to me too!
I use a small mug/cup. however what really matters is the wide mouth, this allows the heat to distribute properly, and the food to expand. i think it will work really well for you,

Hi Gemma, will ice cream instead of whipped cream be ok in the Red Velvet Cake Roll ? how long will it last in the freezer?

Yes, this will work. Years ago there was a commercial product called Artic Roll, which was an ice cream roll, wrapped in a sponge. This is probably the best approach to this. Make a ‘sausage’ of the ice cream, and wrap the sponge around that. If well wrapped it will keep for 3 – 4 weeks in a domestic freezer.

The cream cheese is a problem for lots of people. It is an American institution, so we forget that it is not always available everywhere else. Some people will use Ricotta, others will say use Greek/strained yogurt, though it depends on what you wish to use it for. I have not used these for cheesecakes, but may be useful in other recipes,

I love Apricot jam, it is one of my favorites, and a great store cupboard staple, for adding a glaze to a tart, as a crumb layer for a fruit cake yummy!

I have been watching your channel on YouTube and I am quite a fan of these mugmeals especially pasta ?. I have been trying mug CAKES but it’s not working out. The cake at first rises too much almost the batter flows out and then after some time and it has got a little bit of body it just sits down killing all the spongy texture. I don’t fill too much. What should I do?

It sounds like your microwave is higher wattage than mine. I would adjust this if possible, or alternatively blast cook, so, 30 secs, open the oven check the cake, close the oven 20 secs, open and check, until it is right. When you touch the top of the cake and it feels firm, it is done!

Hello Gemma! I was wanting to make a brown sugar cinnamon mug pop tart, but I’m not exactly sure what I would do to get that sugary crisp to it, considering that it might melt in the microwave. Any ideas? Thank you! ?
Hi Hope,
Yes! that is the challenge with the microwave, you miss out on the crispness. The sugar will not actually have time to melt. A quick blast under the grill/broiler will crisp it but also further cook the roll, so you will need to manage this well, good luck,

For the pop tart, instead of strawberry, I put in some homemade jelly like lemon curd.

Lemon curd is egg based when it is home made. I am not sure that this will stand being re-cooked! Do try other jelly/jam, and a little experiment with the lemon curd, because it would be delicious,

Where do you get all your cute mugs?
Most come from Thrift stores Lauren, like charity shops and goodwill. I’m always on the look out for Old ‘New’ mugs 🙂

Hi Gemma. Looks amazing! How do I avoid getting rubbery eggs in the microwave?
That comes form overcooking.Honestly, ‘undercook’ the eggs a little and then let them sit for 5 minutes and they will cook more. Eggs continue cooking once off the heat so you have to factor that in. Hope it helps 🙂

I made the oatmeal but I want to ask how long you can keep it in the fridge.
I wouldn’t recommend keeping the oatmeal in the fridge after it’s been cooked. If you want, you can prepare it in a mug and keep it in the fridge till you plan to cook it. Hope this helps 🙂
