Hi Bold Bakers!

When it comes to banana bread, the only downside of making it is having to wait for it to be done — so I’ve decided to solve for that. And guess what? Along the way I’ve also solved for not having enough ingredients to make an entire loaf — so if you only have ONE overripe banana, that’s fine, because you’re about to have some banana bread, baby!

Not only is this fast and economical, but it’s also flourless. It’s basically blended oats (oat flour) and banana. Not only do I recommend you make this immediately, especially if you’re over making entire loaves of banana bread, but you’re not over eating them, but I think you should be doing this with your kids. It’s a great way for them to get a treat while secretly learning about measurements and baking!

The texture is super soft, it’s perfectly sweet, and it’s full of filling and good ingredients. What’s not to love?

What You Need To Make Banana Bread In A Mug

What Is The Fastest Way To Make Banana Bread?

It’s single-serving banana bread… but made in a mug instead of a loaf pan. It uses a small amount of just a few ingredients. You can make it in minutes. It’s Simple!

How To Make The Fastest Banana Bread

Banana bread is not hard to make, but if there’s an easier route to something, you bet I’m going to take it. Check out how quick it is to make your next serving of banana bread in a mug (and don’t forget to get the full recipe with measurements, down below):

  • Mash the banana in a microwavable mug.
  • Next, add in oil, maple syrup, and vanilla.
  • Then, you’re going to add in the oat flour, baking powder, salt, and cinnamon. Mix!
  • Dot your blueberries over the top. (You can leave them out if you don’t have them.)
  • Microwave for around 45-55 seconds. (This time is based on my 1200 watt microwave, so your timing might vary.)
  • Enjoy immediately for breakfast, snack, or dessert!

Gemma’s Pro Chef Tips For Making Banana Bread In A Mug

  • Mix it up the night before! Talk about time-saving.
  • If you don’t have banana use apple sauce or pumpkin puree
  • Add blueberries for extra flavor, but you can also add raspberries or strawberries
  • Use honey or agave instead of maple syrup
  • If you want only zero-calorie, zero-glycemic sweetener use liquid Lakanto

The easiest way to make banana bread is single serving, in a mug.

I am discovering more and more of your go to mug cake recipes. Thanks. These are very helpful especially since the measurements are so easy remember. This is besides the actual output being great tasting! I now find myself recommending these to our friends and family. I do however have a strong recommendation for specifying that ‘refined’ coconut oil is the flavorless, neutral sibling of pure first press coconut oil which has an intense coconut flavor. Millions of coastal Indians and other South Asian cultures that use coconut oil (including for hair care and skin care and not just as… Read more »

Tried this recipe and it turned out soooo great! I did feel that 2 tablespoon oil was slightly unhealthy for me, personally. I replaced it with 1 tablespoon oil+a little over 1 tablespoon milk. I could see that 2 tablespoon oil really made the original recipe come out fluffy and soft, while milk made it slightly dry. But considering it was slightly healthier, I didn’t mind it so much. Then I made it unhealthy again by adding chocolate chips because blueberries are a little expensive in India :o) This one of the best and easiest breakfast recipes. Thanks for this… Read more »

Hi Gemma, is there a video posted of this recipe. The videos gives a better idea about the consistency of the batter. Also I don’t have rolled oats with me for oats flour can I substitute the same with refined flour. If yes then what should be the quantity of the same.

Omg you accidentally made a gluten-free, vegan banana bread! Thank you! I can’t wait to try this! I could never find a gluten free & vegan regular banana bread recipe so if this works I will cry happy tears.

This is so yum!! The only thing I would do differently next time is only add 1 Tbsp of maple syrup/honey. It’s so sweet! (and my banana wasn’t even very ripe)
Thank you!

I see that you do mention the wattage of your microwave, which helps, but I also think knowing the size of mug would be helpful as well. Mugs can be large or small so knowing the ounce content would help to insure success.
