Hi Bold Bakers!

Seasonal Mug Cakes could not have come at a better time. Pies steal the show this time of year but I’m here to say they are not the only dessert out there. Mug Cakes are the perfect single-serving treat and they take as long to cook as they do to mix up from scratch.

facebookcoverimage_820x312_v4

While Fall is here I like to make the most of seasonal flavors, like spices, apples and pumpkin. We have such a short period that we can enjoy these flavors so it’s a make hay while the sun shines kinda dealy.

If you are thinking if Mug Meals are for you, then the answer is YES! Mug Meals are for everyone! Whether you are short on time, want portion control, or just want to make homemade meals with little fuss and waste then yes, mug meals are for you. A perfect example of this is my husband Kevin makes the Burrito in a Mug  almost every day for breakfast. Not because we don’t have an oven but because he can make it in less than 5 minutes in the one mug.

I love mug cakes because they are just a speedier way to enjoy cake with little prep time and practically no cleaning up. I have over 50+ Mug Recipes  from breakfast to dessert and everything in between so make sure you check them out.

    • Gemma Stafford on July 22, 2018 at 3:15 pm

Thanks so much. Yes you can bake these at 350oF (180oC) for roughly 8-10 minutes.

Hi Gemma! Was wondering if I can use a hot chocolate mix instead of cocoa? Thanks!

P.S. I made the hot chocolate mug cake filled the top with marshmallows, and it was great! Thanks!

    • Gemma Stafford on January 30, 2018 at 9:10 pm

      Hi,

Really glad you like my recipes. So hot chocolate mix has sugar and other ingredients in it so it is not suitable for baking with. You need unsweetened cocoa powder.

      Gemma 🙂

  6. poop on January 12, 2018 at 3:28 pm

Hi Gemma! Would a microwave oven work for this?

    • Gemma Stafford on January 12, 2018 at 8:15 pm

Yes it sure would. Bake at 350oF (180oC) for roughly 8-10 minutes or until firm in the middle 🙂

  7. Ann on December 3, 2017 at 8:23 am

Hi Gemma, I love your recipes!!!! I made your single serving cookies recently and they were yummy. I want to make the chocolate mug cake (I’m glad it’s eggless) but my microwave is broken. Can I bake it? How long would it take in the oven? Thank you.

    • Gemma Stafford on December 4, 2017 at 3:30 am

      Hi Ann,
Good to have you with us.
Yes, you can bake the mug recipes, though I would choose a different container, perhaps a muffin pan. Make more than one too if you are using your big oven.
180C/350F, for about 10 – 15 mins. All will be well,
      Gemma 🙂

Hi Gemma how long does the mug cake keep once it has been made would it keep for a day or two thanks from Ireland

    • Gemma Stafford on May 5, 2017 at 3:38 am

      Hi Mary,
It is great to have you with us in Ireland.
Microwaved food does not keep! it is best made and eaten. You can premix ahead of time, but once baked it shoiuld be eaten, a bit like scones really, same day.
      Gemma 🙂

Hi, Mrs. Stafford. ! I am a young girl who loves to bake. I binge watch all of your Youtube videos and love your mug meals! The only trouble is, my little sister has anaphylactic food allergies to gluten, dairy, eggs, all seeds, peanuts, flax, and barley. She has never eaten lots of pastries or barely anything made with dough because the texture always cracks and never becomes soft and airy. I’m planning to attend culinary arts school when I’m 16, but for now love to experiment in my own home. I tried making donuts (using your no-knead recipe and substituting the flour, eggs, and dairy for things she can eat), but they turned out more like flat cookies shaped like a donut! I’m writing this email because I would like to suggest you make videos on how to make dough that leaves a clean bowl that is gluten free, nut free, seed free, dairy free and egg free and also how to make other treats that you couldn’t buy free from allergens at a cafe. My little sister could die from her allergies if she isn’t given epinephrine and lots of Benadryl and I don’t want her to miss out on great foods. I know you get lots of requests because you are so great at baking, but could you please take my suggestion into consideration? Feel free to email me back once you get a chance. I’ll be watching every Thursday at 9:30 MT! Thank you.
P.S. A great egg replacer for culinary purposes is Ener-G Egg Replacer. It is a powder you mix with water and seems to work the best for me whenever I make batter.

    Allergen-Free Baker:)

  11. Sarah on January 17, 2017 at 8:16 pm

    Hi Gemma,
You are such an amazing baker and have inspired me to bake more. I was wondering about the hot chocolate mug cake. When I baked it it was very soggy. I continued to bake it for longer and it was still soggy. But when i baked it even longer, it burned. Any tips?

    • Gemma Stafford on January 18, 2017 at 7:56 am

      Hi there,
I use a wide mug/cup. This allows the heat to distribute evenly. A deep narrow mug will be more difficult to manage.
You also need to allow a few mins sitting time at the end of the baking time, to llow the heat to distribute, and the food to finish out.
So, when it feels firm to the touch on top, it is baked, remove it from the oven and allow to stand for a minute or so.
      Try this,
      Gemma 🙂

  25. Rose J on November 28, 2016 at 1:15 am

    Hi Gemma,

I was wondering if it is possible to make your red velvet cheesecake in a toaster oven? As I don’t have the traditional oven or a microwave.
I love every video of yours and specially the BOLD BASICS as it is very much needed in the place where I stay.

    Love Rose J

    • Gemma Stafford on November 28, 2016 at 2:25 am

I am never sure about this question as the ovens vary. however it should be possible in an oven where you can select the correct temperature.
The mug recipes will be best baked in large muffin pans, and more than one at a time for efficiency too.
I think you may need to experiment with your oven, if you have the instruction book it will be a great help,
      Gemma 🙂

    Hi Gemma,

I really love all your videos and recipes. I’ve tried a few and they’ve been a hit… Specially the No-machine ice cream ones ^_^

However, I wonder if these mug recipes can be cooked in a conventional oven as I don’t own a microwave.

    Thanks in advance.
    and Happy bigger bolder baking!

    • Gemma Stafford on November 25, 2016 at 1:45 pm

Hi there, many of these can indeed be baked in an oven. you can use a muffin pan, and bake more than one at a time. Temperature 180 degrees, for about 15 minutes, keep an eye on them, Gemma 🙂

      • Sudha Murali on November 25, 2016 at 11:05 pm

That’s lovely! I always wondered if baked cakes taste better than microwaved one. Now I can test it myself.

        • Gemma Stafford on November 26, 2016 at 6:59 am

Yes, do try this. Microwave cakes have their place, for speed, portion control, and single servings. Baked cakes will keep better, and will be better for a crowd,
          Gemma 🙂

      • Greta on November 26, 2016 at 1:28 pm

180 degrees; is that C or F? Thanks in advance.
