Ingredients

  • 4 tablespoons  (1 ¼ oz/35 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • ½ teaspoon baking powder
  • 4 tablespoons  (2 fl oz/60 ml) milk (or dairy-free milk)
  • 1 ½ tablespoons vegetable oil (sunflower or coconut oil)
  • ¼ teaspoon vanilla extract
  • 1 tablespoon Funfetti sprinkles

Instructions

  • In a microwavable mug, whisk together the flour, sugar, and baking powder.
  • Add in the milk, oil, and vanilla and mix until just combined. Stir in the sprinkles.
  • Microwave for roughly 45 seconds - 1 minute, or until firm to the touch (timing is based on my microwave which is 1200 Watts so your timing may vary).
  • Serve warm with frosting, ice cream or cream. Enjoy!

Recipe Notes

Use a large mug because the water can bubble up in the microwave
Cut your potatoes small because they will cook faster
They can be mixed up in advance for an even speedier meal
Cooking time will vary greatly depending on your microwave and the width and depth of the mug
You can bake them in the oven at 350oF (180oC) for roughly 10-12 minutes. However every mug is different so I advise checking on it after 10 and then make a call.
